Vegetarian "meatloaf" with Indian spices
First time I tried this. Gave my self a B+. The prep time took me over an hour.
1 chopped red bell pepper
1 chopped orange bell pepper
1 box crimini mushrooms, chopped
1 bunch spinach, chopped
1 cup grated parm cheese, grated
1 cup Panko
1 large can Pinto beans, slightly mashed
3 fresh sage leafs, chopped
2 beaten eggs
3 cups cooked brown rice
4 cloves of garlic, chopped
1/2 cup chopped cashews
3 carrots, shredded
2 tbsp sweet curry
1 tbsp garam masala
1 tbsp tumeric
Salt & Pepper
1 sprig of
Saute spinach, garlic & mushrooms & set aside
Mix everything else together than add sauteed items. Mix well again
Put into greased metal loaf pan (pack down a bit) and bake 45 minutes at 350 degrees. Take out and check with thermometer for 160 degrees.
Even better, cold, the next day.......
