any easy to prepare vegetarian meals

Here's a fantastic meatless camping meal. So satisfying to eat by the fire on a chilly evening. Adjust the chipotle to your heat preference (or leave it out all together if you don't like spicy). Can easily be made in the RV, or made ahead of time at home and reheated at camp.

SPICY PUMPKIN BLACK BEAN CHILI

1 tablespoon olive oil
1 small onion, diced
2 cloves of garlic, minced
1 green bell pepper, chopped
1 red bell pepper, chopped
1 chipotle pepper, minced and 1 tablespoon adobo sauce
1 14-ounce can diced tomatoes, with liquid
1 14-ounce can black beans, drained
1 14-ounce can corn, drained
1 cup pureed pumpkin
1 tablespoon chili powder
1 teaspoon cocoa powder
1 teaspoon cumin
1/2 teaspoon oregano
salt and pepper to taste

In a large pot, heat the olive oil and saute the onions, peppers, and garlic over medium heat. Once the onions have softened a bit, add the remaining ingredients. Let the chili come to a boil, stirring occasionally, then turn down the heat and let simmer for about 30 minutes. Serve with warm cornbread and honey butter.

EASY HEALTHY CORNBREAD

1 cup unbleached flour
1 cup cornmeal
1/4 cup white sugar
1 teaspoon baking soda
3/4 teaspoon salt
1 cup plain Greek yogurt
2 eggs, beaten

Preheat oven to 400°. Lightly grease 9" round baking pan. In a large bowl, mix flour, cornmeal, sugar, soda and salt. Add yogurt and eggs, stirring just until well blended. Pour batter into prepared pan. Bake 20 to 25 minutes, or until center of the bread springs back when gently pressed. Serve warm with honey butter.

WHIPPED HONEY-BUTTER

1/2 cup butter, softened
1/4 cup honey
small pinch of cocoa powder

Combine ingredients in a small bowl and beat at high speed until light and fluffy.

I used to go to a street fair every week and get quesadillas with roasted vegies, salsa, and sour cream. So good!

Sometimes I make tostadas by heating tortillas, putting the cheese and beans (or bean dip!) on them in the pan for further heating, then adding tomatoes, avocado, sour cream, lettuce, etc., etc. and serve.

I am a meat eater who also loves vegetarian food :).

Oh another thing that we do is WalMart sells those huge cans of Textured Vegetable Protein, we buy the beef flavor and you mix 1 TVP to 2 cups of water so I make bags of 1 1/2 cups of TVP and toss in the cupboard, and then when I need it I add it to 3 cups of water, boil it up and I've got instant faux ground beef and I use it in Chili, in Spanish Rice, or any one pot meal that calls for ground beef.

We are vegetarian and I have tons of quick to make recipes and I wouldn't know where to start but here are a few of our favorites.
Black Bean Soup
2 cans of black beans, drained and rinced
1 can of veggie broth
1/2 jar of Salsa, we use Med Pace but depending on the level of heat you like you can use mild to OMG.
About a teaspoon of cumin.
Dump in pan, heat and serve with sour cream, and chopped green onions.

Veggie Soup is also quick and easy
5-6 cups of veggie broth
2 1 lb bags of veggies, we use the California with Broccoli, Carrots, Caul, but what ever you like
1 can of diced tomatoes
2 cans of beans
4 cloves of garlic, smashed
1 teas of basil, 1/2 teas of Oregano and thyme
Shake of Tabasco
And you can also add 1/2 cup pasta, 2 diced potatoes, frozen or canned corn, 1/2 cup of grains like rice or barley.
Salt and Pepper.

Bring to a boil and look on low for awhile to mingle the flavors.

Other quick meals would be canned tomato soup with grilled cheese
Mac and Cheese, tossed salad,
We love fresh tomato sandwiches, with cucumber and red onions on sourdough and we use hummus instead of mayo.

Easy Enchiladas is also a favorite

I have those Microwave bowls that have ventable lids, and on the bottom I pour about 1/4 cup of enchilada sauce, then I tear a tortilla up to fit the bottom, I open a can of vegetarian refried beans, and put about a 1/4 cup of that on top of the tortilla, then some corn and ripe olives if you like them, and then repeat, ending with a third tortilla, and covering with the enchilada sauce. Nuke for about 3 minutes and you have big lunch.

Wow everyone there are some good sounding items listed. Funny thing about the lasagna,I realized after reading the post that I pick around the meat in a lasagna anyway. :)

Frittatas made with leftover grilled vegetables and cheese
Veg sandwiches with cream cheese, cukes, tomato, sprouts, avocado
Super nachos with refried beans, cheese, etc
Lazy lasagna: add ricotta, Parmesan and chopped spinach (from frozen) to your favorite marinara and stir well. Stir in cooked pasta and top with mozzarella before heating.
Broccoli soup: to 2 cans veggie broth add a chopped carrot, and a bit of Lawrys seasoned salt and black pepper, bring to boil for five mins. Add 12-16 oz bag frozen broccoli. When broccoli is soft, purée soup in blender in two batches.

If God didn't want us to eat animals, he wouldn't have made them out of meat. :W

Vegetarian lasagna tastes much better than the meat kind (and I am a meat eater!). I use a tomato sauce with mushrooms, and a filling of ricotta, parmesan, basil, and frozen spinach. Some bell peppers are good in there, too.

Eggplant parm is another favorite of mine. You can even make it in a crockpot :).

There are many delicious Thai recipes -- how about some pad thai?

Beans with carrots onions celery garlic tomatoes in pressure cooker or crock pot.
Over rice or pasta with bread.

Kale potato cauliflower casserole. Jamie Dean recipe on the Google.

You can make Shepards Pie with soy crumbles.

Spaghetti sauce with lots of vegetables. (Prima Vera)

Buy some Red Quinoa. Very very tasty grain, and extremely nutritious. Lowest price we have found for it is at Trader Joes. You can add cooked veggies, onions, carrots, corn, currants, black or other beans, to make a complete meal. I mix in shredded cheese at the table. Avoid the white Quinoa - nowhere near as good as red Quinoa - no comparison at all.

DW makes veggie enchiladas, cooks potatoes, onions, and fresh spinach, then wraps them with soft tortilla wraps, add enchilada sauce and shredded cheese. Then bake. Tasty & nutritious!

Spinach has a lot of protein, so does avocados.
