Wanted: Cake donut recipes

I remember helping my Grandmother make cake donuts as a kid. My wife and I have tried a couple recipes, but so far not very satisfied. Not raised, but cake.

If you have a recipe, please let me know.

  • This is one I have copied to make. It may not work for you though because it's for a pan. I bought a pan last summer and still haven't used it, but I have gathered up a recipe. They say this will make 20.

    3 1/2 cups cake flour (I intend on using unbleached white or White Lilly)
    1 cup granulated sugar
    1 teaspoon baking soda
    1/2 teaspoon baking powder
    1 teaspoon ground cinnamon (nutmeg for me)
    1 1/4 cups buttermilk, at room temperature
    3 large eggs, at room temperature
    1 tablespoon honey
    8 tablespoons (1 stick) butter, melted
  • We have one of those old Dazey donut makers and these are the recipes we use. We particularly like the Buttermilk recipe. I see no reason they could not be baked in an oiled oven donut pan.

    DAZEY DONUT FACTORY RECIPES

    PLAIN DONUTS

    1 cup sifted flour
    1 tbsp. baking powder
    1/4 cup cooking oil
    1 egg
    1/2 cup milk
    1/2 tsp. salt
    1/2 cup sugar plus 1 tbsp. sugar
    For variations, add the following flavorings:
    vanilla, lemon, orange or almond extract, ground cinnamon or nutmeg (1/4 to 1/2 tsp. according to taste)

    Combine and sift together dry ingredients. Beat egg and milk together and then add the oil. Mix thoroughly into dry ingredients with an electric mixer. Bake for 5 minutes. Makes about 10 donuts.


    CHOCOLATE THROW TOGETHER DONUTS

    1 cup sugar
    1/2 cup unsweetened cocoa powder
    1 tsp. soda
    1 1/2 cups sifted flour
    1 egg
    1 tsp. vanilla
    1/2 cup oil
    1/2 tsp. salt
    1/2 cup boiling water
    1/2 cup sour milk (to sour, add 1/2 tsp. vinegar or lemon juice)

    Combine in any order, the result is the same. Mix with electric mixer. Bake for 5 minutes. Makes about 10 donuts.


    BUTTERMILK DONUTS

    2 eggs
    3/4 cup buttermilk
    1 1/4 cups sugar
    1/2 whole milk
    2 1/4 cups sifted flour
    1/2 tsp. salt
    1 tbsp. baking powder
    2 tbsp. oil
    1 1/2 tsp. baking soda
    1/2 tsp. ground nutmeg

    Beat eggs. Add sugar and oil. Mix rest of dry ingredients. Combine the two mixes with milk and buttermilk. Mix with electric mixer. Bake for 5 minutes. Makes about 20 donuts.
  • My favorite cake donut is a chocolate devils food with chocolate frosting. Is a buttermilk bar considered a cake donut? I'll keep my eyes on this thread and X my fingers.
  • When we were first married our neighbor lady (may she RIP) made doughnuts every Saturday. She took orders and sold them out of her house. They were so good. She gave me her recipe shortly before she went the a nursing home.

    Doughnuts for 5-6 dozen.

    6 tablespoons margarine, melted
    2 cups of sugar
    1 tsp vanilla
    1/2 tsp salt
    6 eggs
    4 cups whole milk
    5 tsp baking powder
    1 tsp soda
    1 tsp nutmeg (optional)
    6-8 cups flour

    Melt margarine. Add sugar, and salt. Beat with a mixer. Add vanilla, eggs and milk. Beat. Add baking powder and soda and nutmeg to the flour, use enough flour to make a soft dough, not sticky. Roll out to about 1/4" Cut with a doughnut cutter. Fry in lard or shortening which should not be too hot, just so you can see it smoke a little. Fry one side until light brown and turn them over. Take out with a fork and put on paper.

    Now this was her trick for them not being greasy. She had a saucepan full of boiling water on the range. When she took them out of the grease she quick dipped the doughnut in the boiling water.
  • Really good cake donuts are hard to find.

    Ingredients

    Cooking spray
    2 cups all-purpose flour
    2 teaspoons baking powder
    1 teaspoon freshly grated nutmeg
    3/4 teaspoon salt
    2 tablespoons unsalted butter, at room temperature
    3/4 cup sugar
    1 large egg plus 1 egg yolk
    1/2 cup whole milk
    1 teaspoon vanilla extract

    Sift the flour, baking powder, nutmeg and salt into a medium bowl and set aside.

    Beat the butter and sugar in a large bowl with a mixer on medium speed until well combined, about 2 minutes.
    Beat in the whole egg and yolk until incorporated and the mixture turns pale yellow, about 3 minutes.
    Beat in the milk and vanilla until smooth, scraping down the bowl as needed.

    Reduce the mixer speed to low and gradually beat in the flour mixture until just incorporated (do not overmix).

    Transfer the batter to a large zip lock bag with corner snipped off (pastry bag if you have..but I just use zip lock)

    On sheet of parchment paper.......draw 12 circles.
    Flip paper over and lightly coat with cooking spray

    Pipe cake mixture around edge of circles forming a 'donut' 1" thick

    Refrigerate while heating oil to fry
    6 cups of shortening heated to 340*F

    Cut 2 donuts out (about 1' border)
    Flip them over into hot oil.....then peel off parchment
    Fry 1 1/2 mins per side (golden brown)

    2 at a time so oil stays close to 340*F

    Slotted spoon..transfer to paper towels to drain.

    Sister does a icing of little sprinkle or powdered sugar.......I prefer plain.
    Hint of vanilla is the key.
