I like to make a 'Low Country Boil'.
Potato's, Sausages, Corn on the cobs, and Shrimp or Craw fish.
I boil it and remove the basket and set it on the campground picnic table. Dispose of the shells because they attract critters.
Racoons, Opossums, Bears ect...
I pour the Old Bay seasoned water down the camps sewer, then rinse out the pot outside before I take it in the trailer to wash...

Its fast and simple.
I carry a stack of large food 'tainers' when we camp...
(The kind you get with a Burger & Fries at a fast food take out...)
Cost about half the price of paper plates.

Ok I've read everyone's favorite food to cook and I agree simple and easy is the way to go, not to mention easy clean up. So here is an easy recipe that seems to be a real crowd pleaser for me. Broccoli (Chicken-Turkey) Casserol 1 to 1 1/2 cups precooked chicken or Turkey 1 can cream of chicken with herbs, 2/3 cup milk 1 16oz bag of frozen broccoli. 1/2 cup shredded cheese, 2 Tbsp melted butter, 1/2 cup seasoned bread crumbs. Combine chicken or Turkey with frozen broccoli and toss together well. Combine cream soup with milk and spoon over broccoli mixture. Top that with the shredded cheese. Combine melted butter and bread crumbs till bread crumbs are moist but crumbly, top the cheese with this mixture. Bake at 350 for 25 to 35 or until the edges are bubbly and bread crumbs are browned. Serves 2 to 4 adults. I also add garlic bread or crescent rolls with the meal. HOPE YOU ENJOY! This meal can be made ahead of your trip and frozen in an aluminum disposable pan so all you have to do is defrost and bake.

I make munchie type stuff before we go. I make a cheeseball and a bowl of pimento cheese before going. We cook full meals,but tend to snack more when camping. It's handy to have stuff pre-made to have on hand. I take wheat thins or ritz to smear it on.

Preseasoned meats are handy to have too. I buy the preseasoned turkey or pork tenderloins and grill them. I only take the minimal seasonings camping {salt,pepper, onion and garlic powder,and season salt}.

DH and I take turns cooking breakfast. I usually make breakfast burrito's. Easy and one skillet stop on the Coleman stove. We cook white gravy over the fire and biscuits in the camper oven.

I make a batch of pasta salad to take too. Stores in a gallon bag easily.

Pasta Salad:
1 box garden rotini pasta
1 can small black olives
grape tomatoes
1 pack fresh mozz cheese pearls
1 bottle balsamic dressing

Cook your pasta, add everything else and mix. It's really good the second day. You can add fresh basil , parm cheese, or any other veggies you want, like red onions.

Thanks just trying to get ideas on what are good things to make.

In the camper I usually make stews, chili, chii verde etc at home, then freeze and throw in the crock pot at camp.
I alos do small two person casseroles and freeze to do in the oven.

On the grill, carne asada, steaks, salmon, greek lamb chops, kabobs, almost anything and everything.

The main thing I do is a lot of pre-prep, it saves time and mess on the road.

Rather then start a new thread I just thought I'd tuck this discovery in here!

x2 on the cookies! We always pack some cookie dough and bake off a few in the morning to warm up the fifth wheel! Or some cinnamon rolls in the tube. Something that's easy to bake in the morning. In fact cookie dough is the traditional "Trailer Warming" gift we give to friends when they buy a new RV!

The main thing I learned over the years is to pack plenty of easy food. I love to cook so I have a tendency to be over ambitious in my meal planning. I found sometimes I'm just enjoying visiting/reading/staring at the fire so much that meal time rolls around and I appreciate having some thing I can just heat up or pull out of the fridge.
