- doxiemom11Explorer III have a different brand convection, but use it for everything. You cook in it just like you would a regular oven. You should have some wire racks that are to be used when on convection mode. This allows the warm air to circulate evenly around your dish. I have no special recipes. I did read someplace to either reduce the temp by 25 degrees if 350 or above, or reduce the cook time by 5 minutes. I used that as a basis to start and just tried things. It browns like a regular oven. Just try something, see how it goes and adjust temp or time the next time you fix that. I do not use the combo microwave/convection option. Either microwave or convection.
