You are absolutely right!! I always have my Tony's and some gumbo file.

Bacon is not a spice, it's just good food! Dark chocolate, now that's one of the basic food groups for me. ;) As for spices, just salt and freshly cracked black pepper. I keep my camping dinners simple because otherwise there's just too much stuff to cart along (not enough space and not enough memory).

Oh... unless you count hickory wood chips as a spice? Gotta have that for my fish!

I keep all the same spices in the RV as the house. Sometimes if I ran out, I would go out to the RV for a replacement.

Once while camping, my neighbor who was camping with us asked for vanilla and cinnamon, and we had both. Keep a variety out there.

vanilla, nutmeg and cinnamon for French toast batter
salt, pepper, basil, garlic, cilantro, paprika, adobo and old bay.
perhaps a few more but there is nine feet of plowed snow around it and I can't get to it to see.

Rosie made a spice rack on the back side of a cabinet door! She attached Presssure sensitive Velcro to the inside of a cabinet door, bought like, 12 glass test tubes, that have screw caps, and then attached a smaller piece of the matching Velcro to those tubes. They each hold about 2 oz of spice, and she used a clear label to identify each one. It looks really cool, ( a bit like Breaking bad)
They are always fresh, and never fall off that Velcro because they are light.
I have everything there: if you want a list, meet me at a campground this spring , I will cook you a dish!
