zucchini boats

The cauliflower casserole was so good, I'm returning the favor with:

Zucchini boats

split zucchinis in half lengthwise

scoop out insides and mince
mince a bit of onion ( to taste)
1 clove minced garlic

sauté this until soft with a bit of butter
add 1/4 cup bread crumbs and 1/4 cup parmesan cheese
add 1/4 tsp oregano (more or less to taste)

mix together and fill in zucchini shells.

You can also add salt, but we try to avoid it...doctor's orders.

Can be baked in the oven at 400 degrees for 30 mins or placed on the grill and roasted until the shell is soft and the top has a bit of crust.

They're fabulous and will change a zucchini hater's mind.

I hope that you enjoy them. The recipe is for 1 zucchini but you can adjust as necessary.
  • My wife makes Zucchini boats also - but a little different way.

    After slicing and scooping, she fills them with browned Italian sausage (spicy), then spoons on spaghetti sauce (tomato basil) and finishes with mozzarella cheese. Those go into the oven till tender. They are SO GOOD I tend to eat more than I should! She serves them with lightly buttered spaghetti noodles - with a little tomato basil sauce on top.

    Ooh, it is making me hungry... and we just planted our Zucchini seeds. The agony of waiting!
