Zucchini Cakes

My GF biscuit mix has Crisco cut into it. I went the other way. Before GF I was very thin and I gained weight after I learned what was wrong. Doctors asked my husband if I was making myself vomit to be so skinny.

I suspect one could get by with Bisquick or Pioneer baking mix which my be more friendly than the fat added. Bisquick makes a gluten free.
We are overwelmed, well almost, with zucchini right now and using lots of it. One thing I've noticed more this year than in the past, probably wasn't paying attention, is the wide range of moisture content. I have found that every recipe where I used it as a shredded ingredient has improved when I work it a little harder in sieve, rather than just draining.

Looks yummy and the addition of sour cream sounds just right fer a 'tini!

Sincere apologies for the lack of my posting the recipe folks, but now is the first chance I've been online to post. However it looks like dcason already found it!

The only thing we would change for next time is to add green onion and coat with panko for added crisp.

I just finished off the last slice of a zucchini loaf. A friend grows the zukes every year. She bakes and freezes the loaves. Zukes are prolific. A couple of vines in your garden will produce enough zucchini to feed an army.

Does your mix just contain flours or does it have fats cut into it also. I don't really want the added fats. One benefit of being gluten intolerant is that I lost 26 lbs. and I would like to keep it
that way.

Donna, I make mine gluten free. I make my own biscuit mix and everything tastes fine. Even my husband likes what I make. They did not make GF mix years ago and I missed Bisquick so I learned how to make my own.

I have to figure out a way to make mine gluten free...should be interesting...hope it doesn't taste like cardboard.
