A nice 30-06 with a night scope would easily handle the problem.
Most sheep farmers I know don't shoot; they don't have the time to sit and wait. Most snare trap or make sure they have enough guard dogs to keep the coyotes away (or both).
Good point, also Coyotes are extremely hard to a draw down on. We have a coyote issue here as well and the minute I crack a door to try to get a shot at them they're gone. Very frustrating animal to try and control. I wish you the best of luck and I hope your herd stays safe.
