Rooting the device also allows you to block the network connectivity of the worst offenders that you don't use. I use Droidwall, but Root Firewall Pro is good too. That way, you can also limit apps to just working on Wi-Fi as well as blocking completely.
I use Titanium Backup for the app disabling and uninstalling. Requires root, but does a great job at backing up data.
