I think the "old" portable dish on a tripod is good way to go. The most difficult thing is to find a place to carry that big dish. I would also suggest that you devise a wide-base tripod to allow for the extra weight and exposure to wind of the larger dish. Other than that, it is absolutely as easy to set up as any of the older dishes. In fact, the fine tuning adjustments make it possible to always get a superior signal strength. Kinda cool.
