I'm not sure if you mean that it's pretty difficult to intercept an email and doctor a pdf attachment, in which case I'd agree with you that none of my documents are worth intercepting.
But, from a legal perspective, an unsecured PDF has often not been considered the same as an original in those cases where an original is required. However, if you create a PDF with Acrobat and secure it with a password then it is acceptable (or it was with our corporate attorneys).
