Recommend putting off the trip for a few years until the children are older; more like 8+ years old. At their current ages they will get nothing out of the trip and the time it takes to keep them happy will detract from your enjoyment.
You are offering very wise and practical advice. My friend (husband too) raised the very concern you just mentioned.
However, we are but the husbands in the equation. In Italy that has a very low ranking. Usually after the pet and the hairdresser.
Our wives begun arguing in such a way that we were considering a separate compartment or even a trailer for them two! :D LOL.
Jokes apart, we considerd what you pinted out but our wives would not have it. So the next best thing we came up with was to test the our daughters' resilience and behaviour over 3 to 5 days outings in a 7 seater Volvo with long hails in Italy (but we sleep in B&B).
So far the girls tend to become restless only when they become tired but seem perfectly ok during the day, for example, trekking. Short walks (hence the mountain bikes with baby seats) and long rests.
I know that it is not the optimum but we are only husbands... we don't call the shots!
