These are EXACTLY the kind of questions that we need to ask ourselves but, in reality, we don't even know which these questions are.
So, let me answer your questions and pose a few more:

If possible, 2 separate sleeping compartments? Is it feasible/possible at all? We have never driven large lorries. Only large SUVs (I have driven main battle tanks and Hummers but, I guess, that that won't help us here) so another area where we need advice, and we know nothing about, is vehicle agility. We also need to strike a balance between cost/privacy/comfort. Please, can you offer some price/space parameters?

We like outdoors in general.
Perhaps fishing? Swimming for the little girls?
Mainly we hope to do some mountain biking in your Parks.
My friend is good with BBQ so lots of that.
We are not very interested in cities.
We will land in LA and fly out of LA.
We can do long drives as there are two of us.
We expect to ride on non paved roads.
We hope to rent an RV with shower, AC, oven/gas range, cooking set, fridge, TV with Netflix of Hulu/Vudu, (maybe even fishing rods?)...
Pls advise good extras/options to ask for.
I don't really even know what to write to ask for to look out for or prepare for.
Basically, tell us anything you would tell a first time renter...
