As far as separate quarters for 2 families, I am not sure you will have much luck finding a floorplan that fits this need - especially one for rent.
Have you considered renting a pickup truck and a towable trailer? A truck will provide a vehicle that be used to explore, get groceries/supplies, haul misc items and a trailer might offer more room and separate sleeping areas. The cost of a truck/trailer combo should be about the same as a motorized rental.
Sleeping on the side of a road or in rest stops usually isn't a very good idea - if not illegal in some areas. There are some big box stores, like Wal Mart that will allow you to stay overnight - but it's specific to the store and you would have to ask. Of course a campground offers greater safety as well as hookups, but there is a fee. It's usually not hard to find a campground along major interstates - depending how rural you are. Most of this can be overcome with proper planning.

1. Brilliant idea to consider truck + trailer. Will look into it. Can you post in private names of truck+trailer rental companies, if you know any?
2. Googlemaps does not have the option RV stop/camp. Is there a specific App for RV stops/camps?
I am building a check list:

1. Check for hidden costs as cleaning fees, full tank fees, mileage, etc.
2. Remember to buy provisions before starting.
3. Remember snacks for little ones (we may not be able to stop when they are hungry).
4. Consider renting a car nearby or consider renting mountain bikes?
5. We should not go on US holidays: higher prices, lesser choice.
6. Ask for TV with Netflix/Hulu?Vudu
7. Class A rides nicer than C

9 How do we launder clothes? Camps have these facilities. Remember to plan for it
