Nothing wrong with canvas...Have you looked at the latest pop ups? They are awesome....a lot more room than a little casita...
too much hassle for setting up. watched one in the site next to me once setting up, not for me. putting away wet, not for me. hard to heat/AC, not for me. just want to be sure the OP goes into this with eyes wide open.

There's the problem...you watched someone else but never experienced it.
Yes a hard sided camper is easier. A motorhome is even easier.. I've had all of those types. But for what a pop up camper is, Putting up or taking down in the rain is not a big deal. Would I do it in a downpour? Heck no. I wouldn't go unhitch the TT in a downpour either. Or put the jacks out or level it. Or hook up the hoses and electric.
Just like any other type of unit that you have to do anything outside, you plan accordingly to the weather. But, we have done it when it's wet. Wasn't hard to heat or AC. We had ours when living in Georgia. As you know, the humidity is not great there. AC worked flawlessly....Didn't have a heater, but we used a ceramic electric heater without issue. If a bad enough storm came up, we would get in the SUV or go to a bath house. No matter what you are in (and especially at under 3500 lbs as OP mentioned), it won't make a difference.
