Sounds like a great plan. I'm sure your State probably has some wonderful sites. And you might find enough in your own kitchen to supply the RV. You won't need much, paper plates and plastic ware, a roll of paper towels and TP, don't forget the can opener, a coffee pot, a couple of pans. If you go to a campground vs an RV park, buy some wood for the campfire and try your hand at hot dogs on a stick or hobo dinners in foil and of course e'mores.
