Here's my .02 opinion.
I would do one of two things -
1. Assuming you get a different vehicle that you can tow with, consider driving it to somewhere like Colorado or Wyoming and then renting a towable. I gotta believe there are many places that will rent to you. I know this will cost you time, but if you want to see more of the country . . . And the cost will be much less then renting an RV. Start using Google now.
2. If you intend to rent an RV, I would not fly into Vegas. Instead, try flying into Denver or Salt Lake City. RVs rent by the day and mile so flying into a location that is closer to the area you want to visit will save money and give you more time visiting instead of driving.
I will second the comment about trying to find a Chevy Astro van. I had one and towed a large Starcraft fold down with it. Worked great. Rear wheel drive with a real frame (not uni-body). Nice strong V-6 (actually is a 350 motor with 2 cylinders lopped off). Good gas mileage and lots of room. You might even consider keeping your eyes open for a nice low mileage one now and just stick it in the garage.
And the secret to backing up a towable is to put both your hands on the bottom of the steering wheel. Then move your hands in the direction that you want the trailer's back end to move. And use your mirrors.
