Crash resistance. Huh, it would have never in a million years crossed my mind as a criteria for choosing an RV. I look at the layout, the price, the quality of the equipment, the cost to own and maintain, etc. There's nothing wrong with being safety conscious I guess but I wouldn't let it drive the decision.
Converting a bus is going to be expensive if you plan to have it fully equipped as an RV. It's also going to be a ton of work. When you get done, it will likely still look like a bus which may or may not work out too well at most campgrounds. It will probably have almost zero resale value, certainly far less than what you put into it. If you really want to convert a bus I would do a regular charter type passenger bus.
On safety, you can't beat a regular vehicle pulling a trailer. No, you don't need diesel but you must get a proper heavy duty vehicle with an engine and transmission built for towing. Something like a 2500 suburban or a 2500 or 3500 truck with a big gas engine. A GM with an 8.1L and the Alison transmission would be great.
