It seems like you have most of the big stuff covered. But it's the little things that you never really notice until you start using it...like the placement of outlets. For example, in ours, there is almost no counter space. The only good place to set a coffee maker is to the right of the sink next to the stove or on the stove cover. But there is no outlet over there. The only outlet near the counter is almost directly above the sink in the underside of the cabinet. So we have to set the coffee maker in this little corner of the counter behind the sink unless we run an extension cord. Then, if we want to make some toast, we have to shuffle things around to make room. And you may as well forget about any sort of electric griddle. Also, if you think you are going to sit at the dinette table and use your laptop...again, you better have an extension cord if your batteries aren't up to snuff (like mine). Similarly, in the bedroom, are there outlets next to the bed to charge your phone or power an alarm clock? Are there night stands to even set a phone or clock or your glasses?
What about the dump valves? Ours are under the bedroom slide. We typically have full hookup sites, so the grey water is left open. No big deal. But the black tank is a real pain in the rear when it gets full and you have to crawl under there to pull the lever. And its even farther under the slide.
Another thing is what about a garbage can? With 3 kids, we just need a full size kitchen garbage can unless we want to be changing the garbage 5 times a day. We have a spot for it, but some camper layouts don't.
Also, check the depth of any cabinets with a clothes hanger bar. On ours, the cabinets in the bedroom are just a little too shallow for hangers to fit unless they are turned when the door shuts. Not a biggie, but still...for another 3/4", its kind of annoying.
You mentioned mattress size/length. Ours has a short queen size. It wouldn't be so terrible if the wall/door wasn't so close to the foot of the bed. Plus, there is no room in the bedroom to really stand and get dressed without crawling around on the bed.
Check the headroom in the shower. And sit on the toilet too...just to make sure you have room for your knees.
These are just some of the things that I have made mental notes about with respect to our camper.
