I am not into all the math, what to deduct when you carry your water bottle in the cab versus in the trailer... You will get a lot of those answers shortly. There are other experts with regards to the hitch, they will be here shortly as well.
I can share my experience. I have myself and three children (14/11/9). I tow with a F150, comparably equipped and similar ratings to your Dodge. I have found that 7500 lb (loaded) is the sweet spot. It gets you into a trailer around 26-30 feet @ 5500-6000 lb. A family carries a lot of stuff, so I recommend getting the longest and lightest trailer with the best cargo carrying capacity - easy right? I weighed our stuff last year, it came to somewhere around 900 lb that is always in the trailer. This is cookware, utensils, linens, tools and regular camping stuff like lanterns, axe, fire tending, flashlights... Add clothes and food to this when we hit road, also around 20 gallons of water. It does add up quickly, water weighs in at 8 lb per gallon!
Best of luck shopping!
