The unladen weight on my F150 is a bit more than the sticker, probably due to the bed liner and undercoating.
Welcome to 1/2-ton towing (especially crew cabs.) You run out of payload before maxing out on tow capacity.
"...pick your trailer size by determining your left over payload for your hitch weight?" Pretty much. A weight distribution hitch will take weight off the rear axle and transfer it to the front axle and trailer, so you can pick up some capacity if you figure that in.
