The stated (written on the door label) payload is the difference between the curb weight and GVWR - basically your vehicle full of fluids (no occupants). What I was wondering is has anyone taken their vehicle to a scale to determine with just the vehicle and a full tank what their actual payload is using the stated GVWR?

Right, but you're hauling more than just you, that's all I was getting at.
Yes, I have weighed our F350 with a full tank of diesel, and then subtracted that from the GVWR....even with our 1 ton and knowing that we were going to be well under payload capacity fully loaded with the tongue weight, people (usually 5), the truck cap on the full size bed, and all the gear we haul in the bed (grill, tools, bikes, mini-frig, bike trailer, boards for leveling, cooler). I only bring all that stuff up so you can see just how quickly you can load a truck down and subtract from that payload capacity.
