Figuring out max RV capacity can get complicated, but my view has always been to work from the payload number. In your case, the 1,600+ pounds is pretty good for a half ton, and personally I would feel very comfortable towing around a 6K pound TT (loaded weight). This assumes the trailer is properly loaded and you're using a properly adjusted weight distribution hitch. A 6K pound TT should max out at around a 900 lb tongue weight, which leaves a good margin in your payload.
I tow a 8.5K pound TT with an F250 diesel and it does a good job, but I would NOT tow it with a 1/2 ton unless I was only doing very short trips.
Along those lines, a big factor to consider is how far you intend to tow. If your trips are only a few hours away, I'd be more comfortable towing a heavier trailer. If you're planning cross country trips, you definitely want a big safety margin. Having to tow for hours with a 25+ mph cross wind is seriously uncomfortable if you're being pushed around the whole time. You'll have to drive slow and will be exhausted & miserable at the end of the day.
I just got back from a cross country trip and driving east/west, the winds were almost always cross winds, and we had a few 20-30 mph wind days. It would have been MISERABLE if we were under-trucked.
