Both of the trailers you've looked at will be too much weight, once loaded, to meet the payload requirements. The hitch weights will have you over the limit.
Please explain.
2703WS - GVWR 7750lbs, dry hitch weight 549lbs (with WD 67% = 367lbs)
2809W - GVWR 77560lbs, dry hitch weight 701 (with WD 67% = 469lbs)
According to the bodybuild sheet my max trailer weight is 8600lbs and I haven't exceeded my payload. I understand there will be additional payload but the trailers also have cargo capacity - I think between the those 2 I could safely pull either of those trailers.
Both of those hitch weights listed in the brochures are fantasy. Typical hitch weights average 11%->15% of the weight of the trailer. A 7700 lb. trailer will have 850 lbs.-> 1150 lbs. of weight on the hitch. All of that is subtracted from the payload rating. If the hitch weight is 1000 lbs, that leaves 300 lbs, for all of the cargo and passengers in the truck.
I usually abstain from these weight topics as even if the math doesn't work, folks are bound and determined to get a 28'+ trailer with slides and all the amenities because user X states he pulls his 30' rig with no problem.
Even if the trailer brochure weights were accurate (they're not), you would have a hitch weight of 900+ lbs and that would leave 500 lbs. of usable cargo capacity. With your passengers, you will be right at the payload limits.
