Jeffrey, You can travel with water in your tank. Full up if you want to. Fill up at home and take off.
If you're near a spigot that isn't threaded, you'll need a handy device called a "Water Thief" - and you'll also probably need a second set of hands to help you fill your fresh water tank.
The reasons why your dealer told you that you shouldn't travel with water could be any number of reasons:
1) The sway (it's very very insignificant)
2) The gas mileage for carrying those extra pounds around (also very insignificant)
3) The dealer didn't have any experience. Most likely!
