Dash air will most likely NOT cool the back as well as you would like. So start the generator and run the roof air to keep things cool while driving down the road in hot weather. Keep in mind the gen will mostly likely quit if the fuel drops below 1/4 tank so keep an eye on it. Don't forget to turn it off when you stop to refuel. With the gen running all of your 110 appliances and outlets will work. Otherwise there MAY be an outlet or two that runs off an inverter if the unit has one, but I suspect not.
If the television is located where you (the driver) can see it mostly likely it will not operate while the vehicle is moving. If it's in the back then perhaps it will. Getting a TV signal will be your next issue.
