Only driven a few times in the 2 years but not used. Is it safe to store in this
condition or should we re-winterize it?

Have you used the plumbing system recently? Do you have plans to use the RV?
If its just been stored and you are continuing to just store it than just leave it alone.
If you desire to have it checked out and ready to go for next season than I would take it on a shake down trip now and winterize it when you are done. THat assume you have the time to take on a project.
