Hydrogen peroxide is not safe to ingest in any substantial quantity. It's a pretty strong oxidizer, very strong in high enough concentrations, and can cause internal burns and other problems.
Fumes from hydrogen peroxide would mainly be oxygen and water vapor, so breathing them is indeed not a concern.
Neither bleach nor hydrogen peroxide remaining after sanitizing and rinsing an RV water system would be sufficiently concentrated to be much of a health concern. Bleach solutions, or chemically equivalents, are used quite a bit in food services to sanitize kitchen equipment and sometimes dishes. (The other common way to sanitize dishes is with very hot rinse water.)
