We keep our rig pretty much stocked and ready to go as well, even stays plugged in year round. We don't bag our spices all that much, just keep the lids tightly closed. We do bag Sweet n Low, Splenda, and sugar packets as a convenience.
Clumping is not much of an issue as we predominately camp in the four corner states where humidity is nearly non-existent. We've been lucky and have had no issues with insects, ants, or mice with our current rig over the last 8 years.
