I sure hope it's doable. I'm considering the same trip in a few years with 14-16 days also, but 2,000 miles.
I think there's lots of variables honestly with one being the TV/camper used. I've had combos in the past that were somewhat stressful on long interstate runs. 7 mpg and a 26 gallon tank is another example. Last Disney trip was 5 stops for gas, not fun.
Now, I have much more range and a MUCH less stressful towing. Cruise set a 68 (yes 68) and relax.
Buy your kids some Ipads. Suck it up and open your cell phones wifi hot spot for them and go. Consider your insanely high cell phone bill part of the cost. :D
