We get lots of wind in our neck of the woods making it mandatory to have a high quality WD/SC hitch installed and properly dialed in. Although many of our trips involve using interstates to get anywhere we just go slower when the wind is up and roaring. Have had many instances where wind has pushed us around a bit but not to the extent you are describing, thankfully our Chevy HD 3/4 ton TV has been reliably hauling our 33' 10K# TT all over the four corner states for the last decade even under less than desirable weather conditions.
We monitor weather conditions and get an early start since winds tend to get more severe in the afternoon and early evening hours in our region of the country. Although our current set-up is pretty solid going down the highway, we find it better to not test Mother Nature and if at all possible avoid towing in overly windy conditions. Obviously pulling a 12' high, 8.5' wide box down the highway is not an easy task, windy conditions while underway certainly dictates a slower paced towing agenda to keep towing combination firmly on the road ahead.
