That's because drawing more than 30amps isn't the issue.
30amp outlet is just a rating but 30amp rigs rarely reach 30amps draw (typically for a couple seconds when the compressor kick on).
If you have soft start on the compressors, you can run them but you are fire hazard. If you are running 2 air/con plus the microwave, you are probably right at 30amps continuous load. The cord and outlets are only rated at 24amps continuous. Then the design of electrical systems (per code) does not assume that kind of loading, so if you get multiple rigs pushing the limits of a 30amp pedestal, you exceed the branch capability.
