It looks to me like your set up is pretty good. Front height is back to original which is good. You could try getting the rest of the 80lbs back with more bar tension, but not if it causes the front to drop more than unloaded height. As for rear sag, 2" is normal and not excessive. Trucks are raked from the factory for a reason.
If you are transferring enough weight and your bars are parallel to the tt frame then you don't need more tilt to the hitch head. You want the nose of the tt to be slightly nose down as well.
Air bags will help with the wallowing and smooth out the ride. Make sure you have enough tongue weight as well. A tail heavy tt could cause wallowing too.
