I use Flying J or Love's when I'm boondocking and need to fill up on gas / fill the fresh water / fill the propane / dump the holding tanks. I'm willing to pay for the convenience of handling all of that in one stop.
When not boondocking, I shop gas by price when practical. (There are sections of Nevada where you just fill up where you can.)
