I think it's great that you want to keep Rving. I'd suggest either a Class B van, or a small Phoenix Cruiser B+. Get a macerator pump installed for the sewer. That way you're only handling a small hose and with a lot less mess. The Phoenix Cruiser comes with one. You would not have any trouble handling a 30 amp power cord.
With a small MH like those, you probably would rarely have to level the camper. Usually you can try a different spot on the campsite until you are fairly level. We have a small B+, and it's very little fuss. Normally I don't even hook up to water or sewer. We use water from our fresh water tank. When we need more, I put it in. :) So if you don't have to use leveling blocks, and are only hooked up to electricity, well, it doesn't get much easier.
