I personally would never travel that far trusting the fridge and freezer to stay in the "cold safe" zone for the time you need. These fridges are not insulated like the home version and will probably be warm by the time you get to Lake George.
If you choose to try this, I would at least place some frozen stuff in the fridge to help keep it cold. I would think a gallon of frozen water or a bag of ice on the bottom might help.
This sounds like a great chance for an experiment with a RV fridge and a wireless thermometer. Just how long will it stay in the safe range while traveling? :)
