When we are camping within a day's drive (roughly under 8 hours drive or so), we usually cool down and pack the TT's fridge a few days before leaving. For an all day drive, we usually will have something like beef stew or macaroni and cheese that we freeze in advance and put that in the fridge. Also, pre-freeze some water bottles (fill them about 3/4 full then freeze them). Over ten years now, and everything in the fridge has stayed well cold, and the frozen meals are still frozen when we arrive.
If we are traveling longer, we still pre-cool the fridge and pack it before leaving, but with stuff that is not so perishable. Frozen water bottles, soda, fruit - are all fine. We plan on buying things like deli meats at our destination.
Considering that so far our multi-day travel trips have all involved an overnight stop at either a campground or hotel parking lot where we turn the fridge back, the food still is plenty cold when we arrive at our destination.
We've only done two long trips, both times to Disney World. Our fridge stayed at least cool the whole way, but again that was with turning it back mid-way there at a stop over. With local, one day travel trips we've never had an issue.
