Could you put some sort of door over it. A door with a foam or rubber gasket that would seal against the side of your trailer to keep water from getting in. Open the door and flip down the stove to use. Flip the stove up and close the door when your done.
You can buy replacement doors for RV storage compartments. You should be able to find one big enough to cover the stove openining and then add some 3M sealing foam on the inside of the door to seal out the moisture. The door will need to be mounted to the side of your trailer and latched using marine grade hardware.
