That RPM range and speed range seem pretty good to me. I wouldn't change anything. It sounds like the truck was turning about as many RPMs as you would want it to and keeping decent speed. If you're expecting to tow up the hill at 2,000 RPMs in top gear then you'll need a big diesel.
Changing rear end gears takes some very special tools and knowledge. You have to be able to set up the gears so they mesh with the proper pattern or they will wear fast and be noisy. It's not the sort of thing most average guys can tackle in their garage. If you husband is a mechanic and has the right dial indicators and reference charts for mesh pattern then he should be able to do it.
