Yes, I did it on our 2004 Rockwood 8318SS.
When we bought it new, there was a shortage of RV ovens. I believe it was due to a fire at a Mexican plant that makes the oven controllers. Since they couldn't get ovens, Rockwood installed a cooktop and then put in a convection oven/microwave (Apollo).
However, when we dry camp, we can't use the convection oven (electric powered), so I still wanted the oven. A year after we bought the trailer, the oven shortage was over and I bought a new cooktop/oven.
The installation was easy. The cooktop screwed sideways into the edges of the countertop cutout. The gas connection is under the cooktop cover. Disconnect the gas (flare nut), remove 4 screws and the cooktop slid out. Below the cooktop was a storage cabinet with 2 doors. Since the trailers are made to fit an oven, removing the two doors and the center stile between them opened up the exact amount of room needed for the oven. The oven slid into place, and anchored to the edge of the countertop as before. The screws might not be in the same spot, though. The oven actually overlaps the cutout in the countertop, so it hangs there and you don't have to hold it in place while installing the screws. Hook up the gas connection (it was very close to the same spot in our oven as it was on the cooktop). Test gas for leaks, and you are good to go.
