OP... I think you handled/are handling it quite well, all things considered. Although I am very interested in the content of the letter. I think you should open it the last day, and snap a picture and post it so we can read it and have fun with it.
I read through all 8 pages of responses, and I think about the only other thing I might have done, just to have fun, would be to go over and thank them for the awesome gift of flowers/plants/bird feeders, and let them know that it will go great with the outdoor surroundings in my next stop. Ask them if there is anything they would like to keep before you leave, because when you leave, you take ALL your belongings and gifts with you. Let them know you will tell EVERYONE just how great a neighbor they are, and encourage everyone to visit and enjoy all the great neighborly gifts they've provided. Of course, the only path to the plants etc would have to be through their spot.
In the end, I think you handled it about as well as possible, without escalation into something that all parties would regret.
I know the lady is just going out of her mind and that is hilarious. You just have to humor us and post the letter... PLEASE.
