Well, I haven't applied for any of these "jobs" ever, I do a lot of hiring in my current role. I would highlight any supervisory and project management work. This shows the ability to effectively set priorities, build teams and accomplish goals. Working independently is another strength, look for ways to call that out.
In most employment scenarios, references are no longer required (who puts a name down that will tell us something bad?), this would be an opportunity to include a few. I would want to hear from a couple personal references and likely one professional reference.
Last, never underestimate volunteer work and interests/hobbies. This is an indicator that people are interesting and their level of social skills.
