If you go with a travel trailer you still have the bed of the truck available for gear and it will be out of the weather and safe from thieves. Easy to have bicyles, kayaks, canoes, etc. mounted on the top of a pickup cap and to keep gear inside. Firewood, tools, camp furniture, and other items can be safely kept in the bed with a cap or shell.
Where the 5th wheel becomes necessary is at 13,000 lbs. where you need the stronger hitch. The negatives are the ones the OP mentioned and having more steps to get inside than with a regular travel trailer and even needed to step up to get into the sleeping area. These trailers also put a lot greater load on the rear tires of the truck.
Spend some time with your wife visiting campgrounds within a couple hours drive time from your house and look at the travel trailers and 5th wheels and talk to their owners and see how the use them and how they store everything. You will learn things that cannot be learned from reading forum posts.
