we ended up with the same trailer as you (well the 295RE, previous version w/o the bedroom slide.)
As with you, our requirement was that the trailer be "functional" with the slides in. Access enough for lunch breaks, bathroom breaks, rest breaks and be able to have the slides in at night for a quick "getaway" in the AM when we wanted to get on the road early.
It is amazing how many trailers are virtually unuseable for simple things with the slides in.
Yes, with the outback we can't get to the pots and pans drawers, but we can use the microwave, stove, get to dishes, pantry, fridge, and dinette with the slides in.
Also we were amazed at how many had bathrooms that if both beds were used, you ended up crawling over someone or going through a bedroom to get to the bathroom.
BTW, we've logged close to 20K miles with our outback, camped in it close to 300 days and it's been absolutely troublefree. Even with a 6 and 3 year old grandkids on occasion.
