I sold an RV on eBay to a guy in Florida. He has already contacted me & paid the $100 deposit via Paypal. He says he's going to get a transport company to pick it up but we haven't worked out the when...

So far, you are still in the driver's seat...you have his $100 deposit.
I'd make this a cash in hand deal and download, print and have a "sold as is - no warranty - no return," bill of sale signed by him.
Note: somehow this just doesn't sound right to me. FL to TX transport deal, sight unseen...I don't know. Be extra careful with this one.
Hopefully all the skepticism is unwarranted and the deal will go smoothly for you.
