The problem with iPhones is that even if the phone does not turn on again, it can be easily parted out. A replacement screen/digitizer can go for $100/250, and since those do not have serial numbers, those are untraceable. Couple that with threatening the former owner with blackmail about the data stored on the phone, and it becomes very lucrative, from the tweakers on the streets on up.
As someone who has been in the computer security field for a long time, stolen phones are a nightmare for businesses. Yes, in theory you can erase them from remote, but the crooks know that and have Faraday cage bags the phones go into now.
