Just water will add a substantial amount of weight. Add in the other constants like batteries and propane and there is a big "chunk" of your CCC before you add things inside like cookware, dishes, bedding. The weight adds up quickly!
Why we use the GVWR as a safe number is because things tend to accumulate. I look in my garage for example and just wonder how I got so much stuff.
Weight adds up quickly and when we're talking about tongue weight and available payload I would error on the side of caution. Ultimately it is your decision on what ever you do. Just realize that safety while towing is not a joke. It's not meant to be taken light heartedly. You don't estimate the safety of yourself and family while towing. Don't let this be you.
