I know someone who just buried a 55 gallon metal drum. It worked well but they only used it a couple days a month.
I think what you are planning will do a good job.
I would at least double up on the 4x4 plywood covering the hole. And possibly put a temporary fence around the hole. It wouldn't be expensive and would make it a little safer.
What will you do with your grey water? Macerator pump and a long hose?
