Good point, the ones I linked are not "dimmable" due to the constant current regulator.
However, personally I would not let that stop me from using LEDs with a constant current regulator. I would replace the dimmers with switches, problem solved. I am not a fan of lights on dimmers since dimmers do waste energy and replacing incadescent bulbs with LEDs will by far save a lot more energy than a dimmed incadescent.
If you really want dimming then those are not for you. However if your fixture can fit two modules you could add a switch which allows you to choose one or two modules giving you two lighting levels.
I forgot to mention, any LED which has a constant current regulator like I linked can emit RF noise (RFI or Radio Frequency Interference) which can affect OTA TV, AM radio, shortwave radio and such. I have not had the chance to check the ones I linked for RFI so I can not say if they have excessive RFI.
The lights I linked are Warm White (3000K) which is a bit less yellow than halogen bulbs. If you want the blueish white, you can get these modules in 6000K temp..
